Taco Soup Recipe
This taco soup recipe is my husband’s favorite. I have another recipe for a creamy taco soup. I love each of them for different reasons. My husband will always choose this particular recipe while I will cook whichever one I am feeling that day. You will find that this taco soup recipe is so incredible easy and can be done in one pot. Who doesn’t love a one pot kind of dish?!
- 1 pound of hamburger meat
- 1 onion
- 1 can of Rotel
- 2 cans of diced tomatoes
- 1 can of chicken broth
- 1 can of ranch style beans
- 1 can of light red kidney beans
- 1 can whole kernal corn
- 1 package of mild taco seasoning
- 1 package of Hidden Valley Dry Ranch Dressing Mix
In that ONE big pot, you will brown your hamburger meat and chopped onions and drain. Then, you will add the meat and the rest of the ingredients back to that ONE pot and simmer for about 30 minutes. I usually cook mine at least an hour or so in advance and let it just sit on the oven top. However, it is ready to eat at the 20-30 minute mark.
I serve my soup with shredded cheddar cheese, sour cream, and crackers. We also like grilled cheese with ours.
This soup makes a pretty large amount. So, if there are only two or three of you, you will more than likely have a large amount left over. The last time I made this, I had enough for lunch the next day. I also had enough to freeze. So, I put what I had left in a Zip Lock bag. This way, when I need a quick meal I can just un-thaw and eat. We all have those nights where we we need a “heat up” kind of meal.
