Ingredients for Jalapeno Cream Cheese Stuffed Chicken

The ingredients list for jalapeno cream cheese stuffed chicken is short and simple. Don’t you just love lists like that? I cannot stand when I see a picture of a food that looks soooo good and then I open up the recipe and it’s like 20 ingredients and I’ve not heard of half of them.
This dish is so easy and can be adjusted for however many people you are feeding. On this day, I used two chicken breasts because I prepared supper for my husband and me. If you have 10 people, you will need 10 chicken breasts and so on.
Prepare the Chicken
First of all you will want to wash and pat dry your chicken breast. Make sure you have pretty thick breasts so that you can split them in half. When you cut them in half, make sure you leave the top and bottom attached but split them enough so you can stuff them.
You can season your chicken before you stuff them or after. We use a seasoning sold at our local grocery store. But, you can use a variety of things like salt, pepper, garlic powder, and Tony Chachere’s. You can use whatever your favorite seasonings are.
Stuff the Chicken
Once you have your chicken cleaned, dried, and split, you are ready to stuff. I just take a block of cream cheese and slice off the ends. I then place the ends into the chicken breast. I do not go lightly on this part. I love cream cheese so I want to be able to taste it. Next, you will want to place your pickled jalapenos on top of the cream cheese. Again, add as many or as little as you like. If you do not like peppers you can always add onions instead.
Wrap your Chicken
Once your chicken is stuffed, you will want to wrap it tightly with bacon. I prefer to use Wright brand bacon or Smithville bacon. You want to use bacon that is thick so it stays put. You will then secure your wrapped chicken with tooth picks.
Bake the Chicken
I cook my chicken (uncovered) on 400 degrees for about 35-40 minutes. Take it out after 40 minutes and use a meat thermometer to make sure it is done. Once it is done, you will let it “rest” for about 10 minutes before serving. I like to cook mine uncovered so that the bacon gets more crispy and firm versus soft like it is when cooked covered.
I always like to eat my jalapeno cream cheese stuffed chicken with a baked potato and either a salad or broccoli. In this case, I did twice baked potatoes and steamed broccoli for my sides.
This is one of my absolute favorite meals. Not only can you do this with chicken breast, but also chicken tenders. My husband once made these for his grandmother (for a Christmas party). Instead of doing chicken breasts or strips, he did bite size pieces. She said that everyone loved them.
During Christmas, we attend lots of parties and eat lots of food. This is a great dish for those parties. It’s easy and is always a crowd favorite. I mean, you cannot go wrong with cream cheese stuffed chicken wrapped in bacon.
