Easy Chocolate Chip Cookies
I do not buy sweet stuff to keep at home and try to limit the amount of junk food in general. However, cookies are my weakness. I love all cookies, especially chocolate chip cookies. So, I always make sure I have the ingredients to make easy chocolate chip cookies.
I like to make up the cookies and then keep the dough in the refrigerator. Then, as we are ready for cookies, we can just scoop out enough to make cookies as we want them.
There are so many recipes for chocolate chip cookies. Many claim to be easy chocolate chip cookies recipes. However, I can tell you that I have made a lot of cookies and failed at a lot of cookies. I have had chocolate chip cookies turn out large and flat, hard and crispy and everything in between.
So, today, I wanted to share with you the best recipe that I have found. This recipe works for me over and over again. As long as you have this good base for cookies, you can pretty much add chocolate chips, M&Ms and whatever else you like.
This particular recipe for chocolate chip cookies is easy to follow and the cookies are soft and chewy.
- 2 cups of all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup butter, at room temp
- 1 cup of brown sugar
- 1/2 cup of white sugar
- 1 egg
- 1 egg yolk
- 1 tbs vanilla
- 1 cup mini chocolate chips
- 1 cup regular chocolate chips
First, you will want to heat your oven to 325 degrees. Then, with a mixer (I use a Kitchen Aid) – combine the room temperature butter, brown sugar, white sugar, eggs and vanilla. Blend until creamy. Do not over blend. Also, it is important that your butter is not hot and melted. If you do not have room temperature butter – you can stick it in the microwave for a couple of seconds on each side.
If your butter is hot it is going to melt your chocolate and turn into a mess.
Next, you will combine your flour, baking soda, and salt. Once combined, blend this into the moist ingredients. Again, do not over blend.
Lastly, you will stir in your chocolate chips – do not mix. I prefer to use mini chocolate chips and regular size and I typically use about a cup and a half total. I love chocolate chip cookies but I do not like too much chocolate. If you like lots of chocolate, you can add the full two cups. This part is up to you.
Remember, you can add in any type of chocolate or candy that you want. M&M’s always turn out well for me and are a hit.
You will bake these cookies in a 325 degree oven for about 15-17 minutes. 17 minutes is the number for me and my oven. This may vary depending on your oven. But, please remember to not overcook your cookies. You want to remove the cookies from the oven when they still look really soft…as they sit and cool, they will get firm. If you cook them until they are brown they are going to be very hard and crunchy. Believe me, I have been there done that. On the flip side- make sure they are done and not still gooey.
I like to make these cookies and then put them in a bowl and store in the refrigerator for at least a couple of hours or overnight before baking any of them. They just seem to turn out better for me that way. As I mentioned, I usually make a batch and then we just scoop out however many we want to cook. We usually keep the dough in the refrigerator for at least a week.
However, if I need an entire batch of cookies I will let them sit in the refrigerator and then bake all at once. I could honestly make myself sick on these cookies but I limit myself to 1-2 per day when I have them in the house.
