Recipe for Chicken Spaghetti
Chicken Spaghetti is one of my family’s favorite go to easy meals for the fall and winter time. Last week, it was pretty cool here in Mississippi so I found that to be the perfect time to make chicken spaghetti. This easy chicken spaghetti recipe is great because it can pretty much be cooked in one pot and then added to the oven. I do not know about you, but for me…there are nights when I want something that I can throw together in under an hour. This is one of those meals.
I like to serve my chicken spaghetti with a side salad and toast. When I make this, we always have lots of left overs, so we either eat it a second time at supper or eat on it for several days at lunch.
Ingredients for Easy Chicken Spaghetti Recipe
- 1 onion, diced
- 2 large chicken breast, boiled and shredded
- 1 can Rotel
- 1 can Cream of Chicken
- Optional, 1 can English Peas
- 16 oz (1 lb) Velveeta Cheese, cubed
- 1 lb box thin spaghetti noodles
This easy chicken spaghetti recipe can pretty much be made in one pot. You will start by boiling your two chicken breasts. I put my chicken breast in water with some salt. Boil the chicken breasts until done. Once done, remove from the pan and allow them to cool before shredding. Save about one tablespoon of your chicken broth. You will also want to go ahead and boil your noodles so that they are ready when you need them. I boil the whole box, but I do not usually use the whole box because I like to keep my mixture creamy. Adding too many noodles will make it thicken up and have less sauce.
Add the diced onions to the pan with the left over chicken broth. Cook the onions until they are tender. Next, add in your cubed Velveeta cheese and Rotel. Stir until completely melted. Once the cheese is melted, add in your cream of chicken soup. Stir until well combined. Next, add in your English peas. and stir. Finally, you will add in your shredded chicken until combined. Lastly, you will stir in your cooked thin spaghetti noodles.
Once everything is all stirred up, you will add to a greased pan and bake at 400 degrees until hot and bubbly.
