Easy Baked Chicken
As most of you know by now, my husband and I love to cook. During the week, I do most of the cooking because I am at home and Christopher doesn’t get off of work until later. So, it is only fair that I start supper. During the week, I like to be in and out of the kitchen (especially during the summer) so that we can spend time outdoors before bedtime. This recipe for easy baked chicken is one of my go to suppers because it is quick and easy.
This recipe for easy baked chicken is great for those of us who like to be in and out of the kitchen and have an easy cleanup.
Baked Chicken Ingredients
- 2 boneless, skinless chicken breast
- BBQ seasoning (we buy some made up for our local grocery store)
- Clean BBQ sauce
- Olive Oil
Baked Chicken Directions
I have this glass pie type dish that I like to cook my easy baked chicken in. First, I cover this dish with foil (easy cleanup). I spray the foil with olive oil. Next, I spray both sides of the chicken with olive oil and sprinkle with the seasoning. I then spread a thin layer of BBQ sauce down the middle of the chicken.
From there, I just put the chicken (uncovered) in a 400 degree oven (preheated) and cook for about 30 minutes. I use a meat thermometer to check my meat. If you do not have a meat thermometer I highly suggest getting one so you do not overcook your meat. Once your meat is done, just take out of oven and let sit for about 5 minutes. Cutting straight into it will release the juices.
When I cook my easy baked chicken, I generally will add a baked sweet potato and some veggies with it. I wrap the sweet potatoes in foil and cook in a 400 degree oven. I put them on about an hour before I put the chicken in. Then, when the chicken is ready so are your potatoes. For the veggies I just slice up whatever I am using for that night and drizzle with olive oil and seasonings and cook on stove top.
For the sweet potatoes…I just use ghee or grass fed butter and cinnamon and they are DELICIOUS!!
See how easy?!! For clean up, just pick up the foil and throw away. The potatoes are in foil so that is done. The only thing you are cleaning is the pan you cooked the veggies in…EASY MEAL and EASY CLEAN UP.
