My Favorite Soups
January and February for me are some of the main times that I like to make homemade soups. For some reason, cold weather + soup just go to together like peanut butter and jelly. In Mississippi our weather is so unpredictable. When fall comes in Mississippi, it may still be 90 degrees. However, as soon as we start getting some cooler temperatures at night…well…that is when I start making soup for supper.
Creamy Taco Soup
Creamy taco soup is one of my family’s favorite soups. I have two recipes for taco soup that I use. One is a thin, tomato based soup, and the other one is well..this one. I got this recipe from my bestie years ago. This was the first taco soup that I ever ate. I remember walking into her house on a Friday after school and I remember smelling this soup cooking. Her mom had it in the crockpot on the counter.
We ate it before cheering at the football game that night. Since then, I have loved taco soup. There are so many different recipes out there. This particular recipe and my other one run a close match. It just depends on which mood I am in as to which one I cook.
I have changed a few things up from the original recipe. If you like a thicker type soup, this is definitely a good one to try.
2 Cans Cream of Potato
1 Can Cream of Celery
2 Cans of Light Red Kidney Beans (drained)
1 Can of Whole Kernel Corn (drained)
1 Packet of Taco Seasoning
2 Small Cans of Tomato Sauce
1 Pound of Hamburger Meat
Salt and Pepper to Taste
Sour Cream and Cheese as Garnish
Yes, I use Best Choice items. There are some things I do not mind buying generic on. These are some of those things. I like to save money whenever I can. Of course, some things are just better name brand – like cheese and sour cream.
First you will want to dice your onions into your hamburger and cook until done. Drain.
While the hamburger meat and onions are cooking you will add all other ingredients to a large pan and cook on medium low. Add salt and pepper to taste. Once the meat is done, add it to the large pan with the other ingredients.
You will then continue to cook on low-medium for about 30 minutes. If I am in a hurry I will go ahead and eat at this point. If not, I will then turn to simmer and just let it simmer until we are ready to eat.
When ready to eat, I garnish my soup with shredded cheddar cheese and sour cream. Green onions are also a great addition. You can choose any type of cheese that you like. We like to use either cheddar or Monterey Cheddar.
This soup makes a large amount. My husband and I can eat on it for several days after cooking. We usually get tired of it before we run out it. I do not mind leftovers but I’m usually super tired of them after a couple of days.
